Joshua Applestone likes to point out how the automatic teller machine, what we typically refer to as an ATM, changed banking forever. Similarly, he believes the machines he's added to his Hudson Valley butcher shop can do the same for the sustainable meat industry by getting locally raised meat into the hands and bellies of more people for less money and hassle.
“I’ve had this idea for a while,”Applestone tells Modern Farmer in a phone interview. “It goes back to my experiences of going to the automat as a kid in Manhattan. It left a lasting impression.”
